OK, so we have tried yet another new recipe and loved it. This is a super tasty garlic butter spread for corn on the cob. Cook the corn the way you prefer - grilled or boiled and then indulge. Mmmmmmmmm-mmmmmm!!!
Garlic Butter:
1 stick butter or margarine, slightly softened
4 cloves garlic, peeled and coarsely chopped
1/8 to 1/4 teaspoon chili powder - we are wimpy so I used a little more that 1/8.
handful of fresh chives, coarsely chopped
Salt and freshly ground black pepper
1/2 cup crumbled cotija cheese
4 fresh limes, quartered
Combine butter, garlic, chili powder, and chives in a food processor and process until smooth. Season with salt and pepper. Set aside until ready to use.
Cook corn and smear with garlic butter, top with cheese, and sprinkle with lime juice. The picture above is obviously much more heavy on the chili powder.
WOW!!!! This is sinfully good!

I've never even heard of that kind of cheese! Probably too fancy/expensive for me! That does look good though! Yikes!
They sell it at Walmart - cheap.

it looks similar to the recipe we tried from Paula Deen. It was Yummy. This recipe also looks yummy, except for the Garlic. Bleh. IM haveing a huge diversion to garlic right now, which is sad because I love Garlic.
